Our Favorite Country Food Recipes
Our favorite recipes include traditional American country food plus favorites from Italian, French, Mexican and other cuisines. I've been lucky enough to sample food from some of the finest restaurants throughout the world, and many of the dishes have become favorites. When I return home, I try to duplicate my favorites in my own kitchen. Consequently, I've collected quite a few recipes that I consider our favorite recipes, and we'd like to share those with you, from our country kitchen to yours! I admit to being an amateur chef. I enjoy cooking and preparing a meal much the same way as I enjoy building a wood project in my shop. I think it has to do with producing a useable quality product out of raw materials. Like a nice birdhouse, I find it rewarding to build and place a tasteful nutritious meal on the table. Developing a tasteful and nutritious meal from raw, fresh ingredients is even more rewarding.
Although I do understand how some spices, herbs and other ingredients work together and others don't, I'm not a trained chef. Therefore, I always want a recipe to follow, if only to use as a guideline. I've gotten to the point where I'm not afraid to experiment a little, and I've taken a tip from Rachel Ray: I don't always use exact measurements using measuring instruments. I've found that, indeed, a teaspoon of salt is equal to that small mound in the middle of my cupped palm!
So, my advice to anyone who wants to create in the kitchen is don't be afraid. Print your recipe and have it handy in the kitchen while you cook. Read through it first, understanding completely how the process is going to unfold. As much as possible, gather your raw materials and measuring instruments (if used). Do all of your prep work first: cutting, chopping, washing or whatever the recipe calls for. This stage is also where you want to plan individual dishes' cooking times so your whole meal comes together at the proper time.As I've mentioned on other pages, my definition of country food is any homemade food using fresh ingredients. At the risk of offending some down-home folks, I feel that country food doesn't necessarily have to be standards such as fried chicken, mashed potatoes and gravy. To me, country food can be food from any cuisine or culture, as long as it's fresh and homemade!
Having lived in Italy for a few years, Italian food is one of my favorites. I also love French cooking, mainly because of the use of tasty sauces in their food. Because of its close proximity to California, Mexico also has a tremendous influence on cooking and food in our state. We've collected recipes from these cuisines, as well as others, and take this opportunity to share them with you, our readers.
